Sunday Table Glazed Meatloaf

Ingredients

  • 1½ pounds lean ground beef or turkey
  • 2 tablespoons Sunday Table blend
  • 1 egg
  • ½ cup finely chopped onion
  • ½ cup almond flour or breadcrumbs
  • ¼ cup no-salt-added tomato sauce
  • 1 tablespoon honey for the glaze

Directions

  1. Heat the oven to 375°F.
  2. Gently combine the meat, Sunday Table, egg, onion and almond flour.
  3. Shape into a loaf and place in a baking dish.
  4. Mix the tomato sauce with honey and spread it over the top.
  5. Bake until the center reaches 160°F for beef or 165°F for turkey.
  6. Rest for 10 minutes before slicing.

Odessa’s Hope Oven-Crisp Chicken Legs

Golden and crispy from the oven, never deep-fried.

Ingredients

  • 6 chicken legs
  • 2 tablespoons Odessa’s Hope blend
  • 1 tablespoon olive or avocado oil
  • Freshly ground black pepper, if desired

Directions

  1. Heat the oven to 425°F.
  2. Pat the chicken legs completely dry.
  3. Coat the chicken with oil and Odessa’s Hope blend.
  4. Arrange on a lined baking sheet without crowding.
  5. Bake for 40–45 minutes, turning once.
  6. Cook until the center reaches 165°F and the skin is golden and crisp.
  7. Rest for 5 minutes before serving.

FabFusion Arroz con Gandules & Sweet Plantains

Ingredients

  • 2 cups long-grain rice, rinsed
  • 1 can pigeon peas (gandules), drained and rinsed
  • 1 tablespoon Sofrito Soul
  • 1 teaspoon Mama’s Love™
  • 1 tablespoon olive or avocado oil
  • ¼ cup no-salt-added tomato sauce, optional
  • 3 cups low-sodium broth or water
  • 2 ripe plantains, peeled and sliced diagonally
  • Oil for lightly frying the plantains

Directions

  1. Heat 1 tablespoon oil in a heavy pot.
  2. Add Sofrito Soul and Mama’s Love. Stir for 30 seconds to awaken the spices.
  3. Add the tomato sauce and gandules; cook for 2 minutes.
  4. Stir in the rice until every grain is coated with flavor.
  5. Add the broth and bring to a boil.
  6. Cook uncovered until most of the liquid is absorbed.
  7. Stir once, cover tightly and reduce the heat to low.
  8. Cook for 20–25 minutes.
  9. Turn off the heat and rest covered for 10 minutes.
  10. While the rice rests, lightly fry the plantain slices until golden and caramelized on both sides.
  11. Fluff the rice and serve with the sweet plantains.
